Just a question on FormMail

Does FormMail only use Outlook Express or is it automatic no matter what mail client or software is used?

FormMail doesn't interface with any email client like OE. In essence, it acts as a mail client for the user on the site since it takes part in sending an email for them, to you. In turn, you can pickup the email message wherever you want to.
