how do you configure email addresses so that people other than yourself can access their email on your domain without having to know your personal user name and password?

You sound a little vague here. I think you mean to setup an email account for other people than yourself right? You can do that via the control panel, and to access it via a regular email program, the mail server is mail.whateveryoudomainis.com. Same server for outgoing and incoming mail.

that's exactly what i'm talking about. however when i try and go to mail.mydomain.com it says "Hey, it worked !
The SSL/TLS-aware Apache webserver was
successfully installed on this website. " - my domain is inamind.net, so i typed in "mail.inamind.net." i tried mail.inamind.com, but that doesn't lead me to the correct mail (it says check your mail for inamind.COM, but my domain is inamind.NET)

If you're talking about setting up Outlook or some other mail app. then the pop3 and smtp servers are mail.your_domain.com
If you wanted you could still use your ISP's smtp server
If you are talking about web based email then you need the following URL (replacing "your_domain.com" with your actual domain)
http://your_domain.com:2095

if i use http://mydomain.com:2095 , will users be able to change their password and other preferences without having to go through me? also, is there a way to prevent the page from automatically jumping to the last email account you opened through it? and what is an smtp server? :X i'm feeling quite dumb right now lol. thanks for your help everyone,

I don't think you can change password etc, not sure
a smtp server is your outgoing server and a pop3 server in your incoming

mail.your_domain.com is not accessible by a web browser it is for smtp and pop3 settings

to read my domain mail i go through the control panel and use neomail

To read your email via mail.yourdomain.com you need a email client like eudora or outlook. Your users cannot change their passwords. Only you can do that via the control panel.
They can read their own mail through neomail if they login with their username and password through http://yourdomain:2095.
