Can someone explain how VOIP works in terms of hardware? What hardware is involved with VOIP? How do all the phones in your house get connected to one VOIP adapter?

You buy what you call an ATA (Analog Telephone Adapter) that will take an ethernet cable which you have internet coming into, and making a standard telephone plug into. Once you pick up your phone, your ATA will produce a dialtone, and will make your call.
