what tag can I put in the form mail so that the senders email address will appear in the header under "From"?

Where? You mean the HTML tag?

Yes the html tag with the "Post" and all the other tags

I haven't used formmail too much. Have you though about writing your own little PHP or Perl script to do this? It's pretty easy.
